As soon as it gets chilly I bring out my huge pot, throw in every veggie I have and we have dinner for almost a week {I know that that sounds a bit much but you haven't seen this pot... it is huge}. Here is a basic recipe that I use {please note: my cooking is never very exact and you really need a HUGE pot for all of this so if your pot isn't that big you can always cut this in half and get half a week of dinners ;)... one more thing... this recipe is very loose add or subtract whatever you do or don't like}

3 cartons Organic Chicken broth
1 carton Organic Roasted Tomato and pepper soup
6 carrots {peeled and chopped}
4 celery spears {chopped
10 cloves of garlic {I know this sounds like a lot but it is the best way to keep the cold/flu bugs away}
2 yellow onions {chopped up}
2 Yukon potatoes {chop up in quarter size squares}
1 small butternut squash {chop up in quarter size squares}
1 bunch of kale {chop up in large pieces}
1 bunch of parsley {de-stem and chop}
2 heads of corn {cut off kernels}
3 tablespoons of butter
I box of Quinoa Pasta {this is my new favorite thing. It is a protein, gluten free and delicious}
I rotisserie chicken {I tear it up in big chunks and keep the skin on, before I serve it remove all the skin}
salt and pepper to taste
Manchego Cheese

Put butter, carrots, onions, garlic and celery in the pot on medium heat and stir around until the onions are translucent. Add broth and tomato soup + all of the other ingredients. Let cook on low for 4 hours. If you see the pot bubbling turn it down a bit. Add salt and pepper + I love a bit of manchego cheese to top it off... OH and maybe a fabulous chunk of peasant bread on the side. mmm

    I agree, the large pot is a must. Isn't it crazy how big it gets when you start throwing everything in?

  15. hahaha my mouth was watering over this recipe and i was going to comment that i must make it and thenr ealized, i have already commented on this recipe - so funny. but now i really must as i have a kid in bed with the stomach bug as we speak! this is definitely a feel good meal.
