Street Tacos & Blackberry Pie

We have been having lots of street tacos in our house of late and I thought they would be the perfect fun and easy Father's Day dinner. Plus, for desert, make a pie the day before and enjoy it with a little vanilla ice cream. yum. yum.

Carne Asada Street Tacos
So if you are not familiar with street tacos they are usually super simple, small and totally yummy. They usually consist of meet, cheese, cilantro and/or salsa.

Ingredients:
Carne Asada {from... yes you guessed it, Trader Joes}
corn tortillas
Manchego Cheese

Cilantro Salsa-
1 bunch of cilantro de-stemmed and chopped
2 yellow onions chopped
2 tablespoons agave
1 half lemon
salt

First, make the salsa. Put all of the ingredients in the bowl, squeeze the lemon, add a dash of salt and set aside. Hand your husband a Tecate and have him grill up the Carne Asada. The Carne Asada only takes about 8 minutes but at minute 4 throw the tortillas on the grill just so they are hot and ready to go. Set up a mini taco bar and have everyone make their own tacos. Super duper easy and so yummy. I made a little "Spanish rice" to go with... just make some brown rice and saute some skinless tomatoes, onion, carrots, zucchini, peas, and add a spoon full of "Homade Chili Sauce"... You can also open a can of organic refried beans from Trader's with a little Manchego cheese on the top. yum.

... and for desert...

"The Perfect Pie"
My girlfriend Cara and I made up this recipe one day when we "baked like old ladies together." It was such a fun afternoon and a pretty yummy pie came out of it. She actually dropped off a bowl of fresh berries the other day {which is what reminded me to share}.

3 cups fresh berries
1 cup sugar
1/4 tsp nutmeg
1/4 tsp cinnamon
4 tbs flour
1 tbs butter
pinch of salt
lemon zest and juice to taste
double pie crust {we cheat and buy frozen Pillsbury crust... I know, I know but it is good & easy = done & done}
Preheat to 400
Lay pie crust in pie pan and bake empty 5-8 min or until little bubbles form all over. Do not let it get brown! In the meantime, mix together flour, sugar, salt, nutmeg and cinnamon. Add 1/2 c dry mixture to the fresh berries, stir and drain in a mesh sieve or colander over a bowl for 30 minutes to an hour. {Discard or reduce liquid for ice cream sauce by adding a few tbs of sugar and stirring slowly while simmering. yum} Place berries back in mixing bowl and add the rest of the dry mix and lemon to taste. Stir well and spoon into the cooled pie crust. Dot the top with small bits of the butter and lay the top pie crust over. {You can use solid or cutout crust into fun shapes}. Sprinkle cinnamon and sugar liberally over the top. Place aluminum pie crust ring or strips of foil over the crust edges. Bake 25-35 minutes or until top crust looks done and golden brown. Enjoy.

  1. I love that you bake "like little old ladies together". I make blackberry cobbler all summer and Jake LOVES it. I'm going to give your pie recipe a shot and I'll let you know how it turns out!

  5. Blackberry pies sounds divine! I just took the crumb to find some wild blackberries in our 'secret spot' ~ sadly, they were not ready yet, but soon! We cannot wait!

  6. I think you're the new age Martha Stewart. She should be so proud to hand off the torch to you:) All of this sounds incredible. I have to admit that whenever I see or hear "street tacos" I picture a little gang of tacos wreaking havoc everywhere.
