ingredients:
2 bags of frozen mixed berries
4 apples, sliced (any kind will do)
1 lemon squeezed for juice
1/4 cup sugar
1 cup flour
20 vanilla wafers {I used the vanilla wafers from Trader Joe's but I am sure any kind will be just as yummy}
2/3 cup brown sugar
2 tbs pumpkin spice
1/4 tsp salt
7 tbs chilled butter
Set the berries out to defrost. I usually do this in a strainer in the sink a couple hours ahead. Mix berries and apples with 1/4 cup sugar, 1/4 flour and squeezed lemon juice. Pour the berry~apple mixture in a 9x12 casserole dish.
Mix 3/4 flour, brown sugar, pumpkin spice and salt in a bowl add the vanilla wafers and crush them all together {you can use a potato masher or pastry blender}. Make them so the wafer crumbs are all different sizes the biggest being the size of a kidney bean. You want them smashed but for a little texture it is nice to have them chunky. Dice up 7tbs of chilled butter and add to the mix. I did this part with my hands, the final produced should be flaky but moist. Cover the berries with the crumble, throw it in the oven for 45 minutes @ 375 and serve with vanilla ice cream. Delish.
