chicken & veggie stew

Nothing is cozier then a little chicken & veggie stew. So this is a very loose recipe but it never fails. I don't think I have ever made the same stew twice it all depends on what's in the kitchen.

Ingredients:
2 1/2 boxes of organic chicken stock
4- zucchinis
1 - bunch of kale
1 - package of organic chicken tenders
1- big scoop of mayo
1- big scoop of mustard
2 cups - onions {I had a bunch of different types of onions}
10 - carrots {mine were little}
2 - sweet potatoes
{you could also do frozen peas, frozen spinach and any other kind of veggie that you have... just throw it in... you could also throw in some noddles}

First I would cook the chicken. I roast it at 400 for 15 minutes with a mixture of mayo and mustard. This is just a quick way to make a sauce so that the chicken holds it's moisture.
Cut up the carrots and onions (celery would be very good and super traditional... I just didn't have any). Throw the carrots and onions in a big pot with a little olive oil and let them cook for about 10 minutes then throw in all of your chopped veggies, cooked chicken & broth. Let it cook for a couple hours. This makes the house feel so cozy and it is so delicious and healthy. OH don't forget a big slice of nutty ~ seedy ~ whole grain bread.... yum.
