When I was a kid I knew it was a special day if my mom was making some sort of baked good in the morning. So I have been experimenting with all sorts of things for Ross and Henry. This is my favorite so far and I call it Magic because it is chalked with all sorts of healthy goodies & Henry will eat it!

Ingredients: {All of the ingredients can be found at Trader's}

1 1/2 c wheat flour {you can use regular too}
3/4 c Flax Seed Meal - this and the bran can be found next to the cereal at TJ's
3/4 Oat Bran
1 c Light brown sugar*
2 tsp Baking soda
1 tsp Baking powder
1/2 tsp Salt
2 tsp Cinnamon
1 c Carrot, shredded {this is prepackaged at TJ}
2 Bananas, smashed
1 c Dried Blueberries
1/2 c Almonds, sliced
1/2 c Walnuts, chopped
3/4 c Carrot Juice
2 Eggs, beaten
1 tsp Vanilla

Mix together flax seed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, blueberries and nuts. Combine carrot juice, beaten eggs, banana and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix. I pour the mixture into my large dutch oven to bake but you could also pour it into bread tins or muffin tins. Bake at 350 for 20-25 {I would just watch it, depending on what kind of pan you use}. enjoy
*I think the only thing not 100% great is all the sugar... how do you substitute honey or agave in baking?

  1. I guess I'll be baking bread this afternoon. I have everything in the cupboard. Well everything except the blueberries, but I will try with frozen blueberries.

  2. Yum!! Sounds delicious. With a brand new baby, I'm not cooking quite as much (we're mostly eating Trader's frozen meals). You can totally bake with honey or agave. With agave, I think you cut back on the amount since it's so sweet (maybe 2/3 or 3/4 to a cup of sugar)...and the result is a bit softer than with sugar. This is a great recipe!!

  5. Looks yummy! You can also sub the brown sugar with "Sucanat" - a non-refined cane sugar...pure dried sugar cane juice. I am obsessed with it in my coffee and will often use when baking.

  8. YUMMERS! Save a piece for me!

    As for the sweetners, I was a huge fan of Agave until I began to research it a bit more. It is very PROCESSED. Honey is the ultimate for truly organic and no processing. Although, when I bake, I tend to use raw sugar.

  12. so good. just made some muffins. i substituted coconut, applesauce, choc chips, and toasted pecan pieces for various items. thanks for the recipe.
