I have been on a vegetarian kick ever since my girlfriends told me about Food Inc. I read The Omnivores Dilemma a year ago and did the same thing for about 4 months {I always think it is going to stick but honestly I cave when it comes to burgers}. Any way this has been a staple lately.

Lentils {I get the already made ones at Trader's}
Roasted Beets
Corn {I like to cut it off the cob raw or you can roast it 1st with a little olive oil}
Tofu {I like the Organic Teriyaki Tofu at Trader's, mostly because I am afraid of making tofu}
Rice Vinegar
a tiny bit of Olive Oil
Sea Salt & Pepper


  1. i'm so copying this. (well, except for the beets if you don't mind). beets and i have a thing against each other. them being disgusting and all.
    but everything else looks like a fancy party i just have to attend!!!
    i'm a vegetarian, and the same salad and soup gets a little old hat.

  5. Mmmmmm - looks beautiful! I love TJ's. Steve & I have converted to Vegan (been about 9-10 months now) - totally for health reasons! I miss having a big juicy In N Out Burger though.....thanks for sharing the recipe!
