Jennie's Chocolate & Sea Salt Cookies {Gluten Free}

My girlfriend Jennie came over last week with these cookies and I begged her to share... Thanks Jennie!


1 1/4 cup gluten free flour....when in a jam i cheat with bob's red mill gluten free baking mix (i can give you the long list of gluten free flours and gums if you like) but this is so much easier and just as good
1/3 cup unsweetened cocoa
1/2 t b. soda
1 stick plus 3 T unsalted butter - rm temp
2/3 cup packed light b. sugar
1/4 cup sugar
1/2 t fluer de sel (i use pink himalayan salt - and only about 1/4 t - plus a little to dust cookies once out of oven)
1 t pure vanilla
5 oz bittersweet chips - i prefer the dark chips

sift flour cocoa and b.soda-i just whisk until blended
beat butter on med until soft and creamy-add sugars and vanilla-beat 2 min
pour in dry-pulse a few times for a few seconds each-mix on low until flour disappers-dough should be crumbly-toss chips in and mix with hands
divide dough in half and roll into logs-3 in in diameter...wrap with wax or parchment and refrigerate for 3-4 hours

oven 325 preheat....line baking tray...slice logs into 1/2 in sections...bake for 12 minutes

  2. These sound and look amazing. Could we find a way to get some peanut butter in there? Then I'd be on board for sure.
